Ingredients

  • 1.5 pounds boneless chicken breast or thighs, cut into bite-size pieces
  • 0.5 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger paste

  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin

  • 2 tablespoons butter
  • 1 tablespoon cooking oil
  • 1 small onion, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1.5 cups tomato puree or crushed tomatoes
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika or Kashmiri chili powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon sugar
  • 0.5 cup heavy cream
  • 0.25 cup water, if needed
  • 1 teaspoon dried fenugreek leaves, crushed
  • Fresh cilantro, chopped, for garnish

Instructions

Marinate the chicken Add chicken, yogurt, lemon juice, ginger, garlic, and spices to a large bowl. Mix well. Cover and rest for at least 20 minutes. For deeper flavor, marinate for 2 to 4 hours.

Cook the chicken Heat oil in a large pan over medium-high heat. Add the marinated chicken pieces. Cook for 5 to 7 minutes until the outside turns light brown. Remove the chicken and keep it aside.

Start the sauce In the same pan, add butter. Add chopped onion and cook for 3 to 4 minutes until soft and light golden.

Add garlic and ginger Stir in ginger paste and garlic paste. Cook for 30 seconds. Do not burn them, or the sauce may taste bitter.

Add tomato and spices Add tomato puree, garam masala, coriander, paprika, cumin, salt, and sugar. Stir well. Cook for 8 to 10 minutes until the sauce becomes thick and glossy.

Blend the sauce For a smooth butter chicken sauce, blend the tomato mixture carefully. Then pour it back into the pan.

Add chicken back Add cooked chicken to the sauce. Stir well so every piece gets coated.

Finish with cream Add heavy cream and a little water if the sauce feels too thick. Simmer for 8 to 10 minutes on low heat.

Add fenugreek and garnish Crush dried fenugreek leaves between your fingers and add them to the sauce. Garnish with fresh cilantro.
