    • Customizable: You can add more vegetables like spinach or zucchini to increase the fiber and nutrient content.

    Cooking Tips and Tricks

    1. Don’t Overcook the Noodles: Lasagna noodles can get mushy if overcooked, so be sure to check the texture after 8 minutes. The noodles will continue to cook slightly in the soup after you turn off the heat.
    2. Make it Spicy: If you love spice, add a dash of crushed red pepper flakes or even a chopped jalapeño for extra heat.
    3. Go Vegetarian: Skip the meat and use mushrooms or a mix of vegetables for a vegetarian version of this soup. You can even add beans for extra protein.

Lasagna soup is a comforting and delicious dish that takes all the rich flavors of traditional lasagna and transforms them into a warm, hearty soup. It’s a perfect meal for a chilly day when you crave the taste of lasagna but want something easier to prepare.

    Equipment

    • Large Stockpot
    • Wooden Spoon
    • Knife & Cutting Board
    • Can Opener
    • Measuring Spoons & Cups

    Ingredients

    Servings 2
    • 1 lb ground beef
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 can (28 oz) crushed tomatoes
    • 4 cups beef broth
    • 2 cups water
    • 1 tsp Italian seasoning
    • 0.5 tsp red pepper flakes
    • 1 tsp salt
    • 0.5 tsp black pepper
    • 8 oz lasagna noodles, broken into pieces
    • 1 cup ricotta cheese
    • 1.5 cups shredded mozzarella cheese
    • 0.5 cup grated Parmesan cheese
    • Fresh basil or parsley for garnish

    Instructions

    1
Cook the Meat: In a large stockpot, heat a bit of oil over medium heat. Add the ground beef (or sausage) and cook until browned. Break it apart as it cooks.
    2
Add Aromatics: Add the chopped onion and garlic to the pot. Sauté for 2-3 minutes until fragrant.
    3
Add Tomatoes and Broth: Pour in the crushed tomatoes, beef broth, and water. Stir to combine. Add the Italian seasoning, salt, pepper, and red pepper flakes (if using).
    4
Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld together.
    5
Cook the Noodles: Add the broken lasagna noodles to the soup and cook for another 8-10 minutes, or until the noodles are tender.
    6
Finish the Soup: Stir in the ricotta cheese and mozzarella until melted and creamy. Taste and adjust seasoning if needed.
    7
Serve: Ladle the soup into bowls. Top with a sprinkle of Parmesan cheese and fresh herbs, if desired.

    Notes:

    • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. The soup may thicken as it sits, so you can add a little more broth or water when reheating.
    • Freezing: You can freeze lasagna soup for up to 3 months. Just make sure to store it in an airtight container and allow it to cool completely before freezing.
