Taco Soup is a delicious and hearty dish that brings all the wonderful flavors of a taco in a soup form. Packed with ground beef or chicken, beans, corn, tomatoes, and taco seasoning, this dish is the perfect comfort food for chilly nights or a quick weeknight dinner

    Equipment

    • Large Soup Pot
    • Wooden Spoon
    • Can Opener
    • Knife and Cutting Board
    • Measuring Spoons
    • Colander

    Ingredients

    Servings 5
    • 1 lb ground beef (or chicken or turkey for a leaner option)
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 1 packet taco seasoning
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) corn kernels, drained
    • 1 can (14.5 oz) diced tomatoes, with juices
    • 1 can (4 oz) diced green chilies
    • 1 cup beef or chicken broth
    • 1 tsp chili powder
    • Salt and pepper, to taste
    • Optional toppings: Sour cream, shredded cheese, cilantro, crushed tortilla chips, jalapeños

    Instructions

    1
Brown the Meat: In a large soup pot, cook the ground beef over medium heat until browned, breaking it apart with a wooden spoon as it cooks. Drain excess fat if needed.
    2
Add Vegetables: Add the diced onion and minced garlic to the pot. Cook for 3-4 minutes until softened.
    3
Season: Stir in the taco seasoning and chili powder, cooking for an additional minute to toast the spices.
    4
Add Canned Ingredients: Pour in the beans, corn, diced tomatoes (with their juices), and green chilies. Add the broth and stir everything together.
    5
Simmer: Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, allowing all the flavors to meld together. Season with salt and pepper to taste.
    6
Serve: Ladle the soup into bowls and garnish with your favorite toppings like shredded cheese, sour cream, cilantro, and tortilla chips.

    Notes:

    • Freezer-Friendly: This soup freezes really well! Store it in an airtight container in the freezer for up to 3 months.
    • Toppings: For extra flavor and texture, try adding a squeeze of lime juice, diced avocado, or even some crushed tortilla chips on top.
    • Make It Spicy: Add diced jalapeños or a sprinkle of cayenne pepper for more heat if desired.
